Chickpea Curry Salad Sandwiches

So today we bring you a delicious recipe from one of our all time favorite vegetarian cookbooks, Naturally Nourished by Sarah Britton. The Chickpea Curry Salad Sandwich is just one of many, many incredible recipes in this book. This sandwich is easy to make and exceptionally delicious. Not to mention it’s packed full of nutrients, protein and lots of flavor. We’ve tried it ourselves and the verdict is in–amazing! 6 Tbsp mayonnaise
1 Tbsp curry powder
1½ tsp fresh lemon juice
Fine sea salt and freshly ground black pepper, to taste
2 (15-oz) cans chickpeas, drained and rinsed
1 oz raw pecans, chopped
3 Tbsp raisins, chopped
1 stalk celery, diced
2 spring onions, diced
8 slices whole-grain bread
Lettuce or sprouts
Sliced red onion, (optional)
In a bowl, mix together mayonnaise, curry powder, lemon juice, salt and pepper.
Blend the chickpeas in a food processor, pulse to roughly chop.
In a separate bowl, combine chopped chickpeas and mayo. Fold in pecans, raisins, celery and onions. Season with salt. Serve on whole-grain bread with lettuce or sprouts and onion, if desired.
